Sourdough Pancakes

A delicious sourdough-based pancake recipe that can be made fresh or prepared overnight. Perfect for a quick breakfast using sourdough starter.

Ingredients

  • 3/4 cup sourdough starter discard(200 g, stirred down)
  • 1 cup buttermilk(240 g, or milk as substitute)
  • 3 tablespoons white sugar(50 g, or honey)
  • 1 teaspoon vanilla extract(5 g)
  • 4 tablespoons butter(56 g, melted)
  • 2 cups all-purpose flour(240 g)
  • 2 large eggs(lightly beaten, add just before cooking)
  • 1 teaspoon baking soda(add just before cooking)
  • 1 teaspoon baking powder(add just before cooking)
  • 1 teaspoon fine sea salt(5 g, add just before cooking)

Instructions

  1. Combine sourdough starter discard, buttermilk, white sugar, vanilla extract, melted butter, and all-purpose flour in a bowl.
  2. Mix everything together. You can either make the pancakes immediately or prepare the mixture overnight.
  3. Just before cooking, add the lightly beaten eggs, baking soda, baking powder, and fine sea salt to the mixture.
  4. Cook on a griddle or skillet according to your preferred pancake cooking method.
