Sourdough Pancakes
A delicious sourdough-based pancake recipe that can be made fresh or prepared overnight. Perfect for a quick breakfast using sourdough starter.
Ingredients
- 3/4 cup sourdough starter discard(200 g, stirred down)
- 1 cup buttermilk(240 g, or milk as substitute)
- 3 tablespoons white sugar(50 g, or honey)
- 1 teaspoon vanilla extract(5 g)
- 4 tablespoons butter(56 g, melted)
- 2 cups all-purpose flour(240 g)
- 2 large eggs(lightly beaten, add just before cooking)
- 1 teaspoon baking soda(add just before cooking)
- 1 teaspoon baking powder(add just before cooking)
- 1 teaspoon fine sea salt(5 g, add just before cooking)
Instructions
- Combine sourdough starter discard, buttermilk, white sugar, vanilla extract, melted butter, and all-purpose flour in a bowl.
- Mix everything together. You can either make the pancakes immediately or prepare the mixture overnight.
- Just before cooking, add the lightly beaten eggs, baking soda, baking powder, and fine sea salt to the mixture.
- Cook on a griddle or skillet according to your preferred pancake cooking method.
